Feeling Nostalgic!

Flying back home today after a gorgeous weekend away our first necessary stop was the food store.
I thought back to those beautiful Sunday lunches at Bennet's house on Shirley Slope and the incredible lamb shanks he use to prepare and thought, can we replicate!?
Not sure I can ever duplicate or replicate those blessed days with the likes of Brent and June at the table keeping us all entertained and captivated but we are going to give it a try at least with the food but will always miss the company.
Sear the lamb shanks until brown, toss everything into the pressure coooker and let it go for one hour. Not low and slow like Bennets version that was roasted in the oven to heavenly perfection but we are hungry!

Mac N' Cheese is part of everyone's yearning!
I personally do not know one person who does not like mac n' cheese. I consider this comfort food and very nostalgic for me.
For this version I just cooked a box of mac then added some mascarpone, shredded monterey jack and colby, one egg and fresh basil. Spray the muffin tins well, divide evenly then top with a mixture of melted butter and panko crumbs.
Bake at 350 degrees for 10 mins. -
Fiesta Cauliflower, something new??
Orange cauliflower, who knew......? It was so pretty we just had to try.
Steam add butter salt and pepper. Dats it!
We will serve these alongside the pressure cooker lamb shanks and be transported back in time.

Indulge.....
Filet Mignon
Mushrooms/Portobello and Shiitake
Parsley
Thyme
Shallots
Garlic
A cup of red wine
Puff pastry sheets -
Enjoy.....
Pan sear the steak on each side for 5 minutes until brown.
Finely chop the mushrooms and combine with the remaining ingredients then heat and reduce for about 10 mins.
Stack and roll up in puff pastry, brush with egg wash, then cook at 400 degrees for 20 minutes. -

Keep it simple and just add thyme, salt and olive oil.
Cook for 1 hour at 350 degrees. -

A natural beauty needs nothing to make her shine.
Steam beans for 15 mins. -

The leading man! LAMB ROAST.
Rub him with olive oil, garlic, rosemary, thyme, salt & pepper and cook at 350 degrees for 1 hour and 40 mins.
Toi Et Moi
My plan is referred to as "PP"............protein and portion. The idea is to eat less carbs and use a small bowl or plate to control my portion sizes.
Tonight is Chicken and salad. Take a short cut and buy a roast chicken then add as many salad items as you can think of.
Lettuce, tomatoes, corn, hard boiled eggs, olives, beets, onions, avocado, cucumber. Add nuts, cranberries or raisins for interest. Try using a low cal dressings (but dont hurt your head on this one) just think portion control!
