Sous vide soul food for two!
Last weekend I watched one of my all time favourite movies, 'Soul Food' and was inspired to go back to my Mother's roots and make a meal every Southern woman would be proud of. Soul food is basic, down-home cooking with its roots in the rural South.
In his "Soul Food Cookbook" (1969), Bob Jeffries summed it up this way: “While all soul food is Southern food, not all Southern food is soul. Soul food cooking is an example of how really good Southern [African-American] cooks cooked with what they had available to them.”
For lunch we got, fried chicken, mac n' cheese and homemade dropped biscuits! We should really have thrown in some collard greens or black eyed peas but unfortunately I could not find any collard greens in Nassau and my husband does not really care for the peas.

Easy Drop Biscuits
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon white sugar
1/2 cup chilled butter, diced
1 1/4 cups whole milk
Add scallions if desired
Preheat an oven to 450 degrees
Mix flour, baking powder, salt, and sugar in a bowl. Cut in the cold butter with a knife or pastry blender until the mixture resembles coarse crumbs. add milk.
Drop the batter by spoonfuls and bake for 12 to 15 minutes, until the tops are golden. -
Sous Vide Fried Chicken
Salt & pepper the chicken, add lemon wedges, lemon juice, olive oil, rosemary and thyme, then seal the sous vide bag.
Cook at 146 degrees for an hour and 15 mins.
Once cooked, dredge the chicken in egg then flour, heat your skillet and oil then drop it like its hot until your chicken is crispy and golden! -
Not your Mamas Mac n' Cheese
1 pound elbow macaroni
1 quart milk
8 tablespoons (1 stick) unsalted butter, divided
1/2 cup all-purpose flour
12 ounces mozzarella cheese, grated (4 cups)
8 ounces extra-sharp cheddar, grated (2 cups)
1/2 teaspoon freshly ground black pepper
1/2 teaspoon grated nutmeg
1 1/2 cups panko crumbs
Everybody in the pool.....
Time to sous vide!
