Perfect Paella
Not only did we get to travel to Toronto for the weekend but we also were able to journey to every foodies dream, The St. Lawrence Market.
If you have not yet had the privilege of venturing into this food hall you are truly missing out on an amazing experience and discovery!
There you can find speciality markets, International merchants, local farmers, artisanal cheeses, prepared foods, beverages, seafood, restaurants, flowers, grass fed meats, and cooking schools. It is truly a paradise where you can literally spend hours wondering around, sampling and soaking it all in.
On the menu for this evening is PAELLA and at the helm is Virgilio Russi who will guide us through the market to purchase our fresh bounty and then show us how to prepare this one dish wonder!

The Seafood Selection
Lobster
Clams
Shrimp
Calamari
Scallops
Chorizo
White Rice
Red and Yellow Peppers
Haricot vert (green beans)
Diced tomatoes
Parsley
Green onions -
The Directions (As best as I can remember)
Sauté the chorizo, garlic onions and haricot vert. Macerate then add the vegetables and rice.
Cook using fresh fish stock and saffron. Add the fresh seafood adding the lobster and shellfish last. Cover with tin foil and dish towels.
I am sure I missed out half of the steps and ingredients Virgilio but it was amazing!!!! Let's just say it is a secret recipe! -
The Side
For a sexy side salad. Take fresh figs, prosciutto, buffalo mozzarella and fresh basil.
Drizzle with balsamic glaze and honey.
